Delicious Layered Key Lime Pie

This is not your typical Key Lime Pie, but let me tell you it is DELICIOUS and really easy to make!
I learned this recipe at school when I was only ten years old and I’ve been making it since. This is my to-go recipe every time I get invited to a dinner party or potluck. I prefer making a cold dish when I get invited to someone’s house because I don’t have to worry about heating it up in the oven and I can enjoy the dinner knowing that my dish would be served at its ideal temperature.
This pie has such a fresh taste and it’s not overly sweet, thanks to the lime juice. It is simply the perfect dessert for both, people with a sweet tooth like me and those who prefer savory dishes. Did I mention no baking involved and you only need four ingredients? I know, shocking! This might sound too good to be true, but you must try it.

Ingredients
- 12 Limes
- 2 Packs of Maria Cookies ( or Graham Crackers)
- 2 (14oz) cans of Sweetened Condensed Milk
- 2 (7.6oz) cans of Table Cream
Serves: 15 people (Adjust Servings)
Step By Step Instructions
1. Use a Microplane or the fine side of a box grater to zest all the limes. When you are done, set the zest aside because you will only use it at the end for garnish. I love lime zest and I like to top my pie with an entire layer of it. It gives it a nice touch of color!
2. Cut the limes in half, and juice them by hand or with a juicer. I would generally pick soft limes from the lime tree in my backyard, but sadly the crows have pecked every single lime haha. I bought these ones at the grocery store and I try to pick the ones with soft skin. The softer the limes the easier to squeeze. You want to get the most juice from your limes.
3. Pour the sweetened condensed milk and table cream into a blender and mix them at medium-low speed. Then slowly add all the lime juice and mix all until combined.The lime juice gives the pie that tartness that makes key lime pie so yummy and the condensed milk the hint of sweetness to balance it out.
4. After you are done with the creamy mixture set a layer of Maria cookies in a glass baking dish. You can also break some of the cookies into fourths in other to fill the spaces between the cookies. In this case, a used a 9″ X 13″ rectangular Pyrex.
5. Spread evenly a third of the creamy filling on top of the layer of cookies. I used a rubber spatula to make it easier. Repeat step 4 and 5 until you run out of the mixture. Make sure you save enough mixture for the top layer. You don’t want the top layer to be thin enough that you can see the cookies. For this particular pie, I only did 6 layers in total, but you can do more layers if use a smaller bake dish.
6. YOU ARE DONE!! Now garnish your pie with as much lime zest as you like. I went crazy and used all of it haha! Refrigerate it for at least 2 hrs and then it will be ready to serve!
Voila! A mouthwatering dessert that your friends and family will love! a total crowd pleaser!

- Spread a third of the creamy filling evenly over the cookie layer. Repeat step 4 & 5 until you runout of filling.
- Garnish with lemon zest and Refrigerate for at least 2 hours before serving.
