DELICIOUS Paleo Banana Bread Recipe

If you read my blog post about My  TOP 10 “you must try ” Disney-desserts then you probably figured out I have a sweet tooth. For some people, their guilty pleasure could be either burgers, fries or pizza, but for me are brownies, chocolates, and ice-cream. I have tried to be strong and suppressed my sweet cravings for days, but I always end up giving up after a couple of days. This sweet tooth of mine always plays against my wish of being ” fit & healthy”. I wanted to do something about it and after doing some research I realized that I’ve been doing everything wrong. The answer to my problem is not to say NO to sweets, but rather make healthy sweet treats that can satisfy my sweet cravings. I am going, to be honest, I’ve tried the “eat fruit for dessert ” habit, but it has never satisfied me completely. I don’t know about you, but I can’t eat fruit when the only thing I have in mind is a piece of cake. If you are like me then you are going to love this healthy, sweet and delicious paleo banana bread recipe. In case you are wondering, Paleo is a kind of diet based on what people used to eat during the Paleolithic period ( around 2.58 million years ago). It basically consists of meat, fish, eggs, vegetables, fruits, nuts, seeds, herbs, spices, healthy fat, and oils. With that being said, this banana bread will not only satisfy your sweet desires but also nourish your body with healthy ingredients! ENJOY!

Ingredients

  • 4 bananas
  • 4 eggs
  • 4 tablespoons of butter ( This time I use salted butter, but I generally use unsalted butter)
  • 1/2 cup of almond butter 
  • 1/2 cup of almond flour
  • 1 tablespoon of cinnamon
  • 1 teaspoon of  vanilla extract
  • 1 teaspoon of baking soda 
  • 1 teaspoon of baking powder
  • pinch of salt ( Since I use salted butter, I skipped this ingredient)

NOTE: The key to a sweet banana bread is very ripped bananas. They don’t look very pretty, but this is exactly how you want them to be. 

Step By Step Instructions 

1.Preheat your oven to 350 degrees Fahrenheit 

2. Put the bananas in a bowl and smash them with a wooden spoon until they become pure. The texture should be as smooth as possible.   

3. Add the eggs, butter, vanilla, and almond butter to the banana puree. You can use a wooden spoon or an electric mixer to blend the ingredients. 

4. In a separate bowl mix all the dry ingredients: almond flour, baking powder, baking soda, and cinnamon. 

5. Add the dry ingredients to the banana mixture, and combine them very well.

6. To achieve the perfect consistency of the bread butter use a blender to mix the ingredients one more time. 

7. Grease a loaf pan with cooking spray and pour the bread butter evenly.

8.  Place the loaf pan in your preheated oven and bake it for about 50 to 60min. At about 50 minutes insert a toothpick in the center of the bread, if the toothpick comes out clean the bread is ready!

9. Remove the bread from the oven and let it cool on a cooling rack or separate plate. 

10. Voila! The bread is ready to be sliced and served. The cake’s consistency should very moist and soft.  If you want your bread a little bit sweeter just drizzle some honey or agave syrup on top.
